These are my family’s favorite chicken wings, and they are always a hit when we share them. A two-step baking gives these wings a lot of flavor. Don’t skip the first bake with the Italian dressing mix coating. I think Frank’s hot sauce gives these the most authentic buffalo wing flavor, but feel free to use your favorite brand.

Ingredients Needed
- Chicken Wings: Party-style wings work best as they are already separated at the joint.
- Italian Dressing Mix: Your favorite brand. You can use a homemade mix or substitute dry ranch mix.
- Butter: Adds richness.
- Hot Sauce: Frank’s Red Hot is my go-to here, but any thick hot sauce works.
- Lemon Juice: Adds a little brightness and a little tang.
- Dried Basil: Rounds out the flavor; optional but recommended! You can use Italian herbs,too.
How to Make Buffalo Chicken Wings
My buffalo wings are baked, not fried, and super flavorful with minimal effort. For the full printable recipe, check out the recipe card at the end of this post.



- Preheat oven to 425F. Line two large baking sheets with aluminum foil and spray lightly with cooking spray.
- Place half of your wings in a large zip-top bag and sprinkle one packet of Italian dressing mix over the wings. Close the bag and shake to coat the wings with the dressing mix. Arrange the wings evenly on one of the prepared baking sheets.
- Repeat Step 2 with the remaining wings and one more packet of dressing mix.
- Bake wings for 35 minutes, rotating trays halfway through baking time. Remove pans from the oven and reduce heat to 350.
- Stir together melted butter, hot sauce, lemon juice, and dried basil. Use half of the sauce to brush over the tops of the wings – reserve any remaining sauce.
- Return the wings to the oven and bake for 15 minutes.
- Remove from oven and turn each wing over. Brush each wing liberally with your remaining sauce mixture. Return to oven and bake for an additional 15 minutes or until wings are starting to crisp on top.
- Serve wings hot with blue cheese or ranch dressing as a dip.



Helpful Tips
- Line your pans with parchment paper or aluminum foil. These wings are super saucy, and lining your pans helps with cleanup.
- Don’t skip the first bake with the Italian dressing mix coating. It adds tons of flavor and helps them crisp up nicely.
- If you want an extra crispy finish, you can broil the wings for 2–3 minutes at the end for that crispy skin. Keep an eye on them while doing this.
Storage Information
Refrigerator: You can store leftovers in an airtight container for up to 4 days.
Freezer: Simply freeze cooked wings in a single layer, then transfer to a freezer-safe bag. Reheat in the oven at 375°F until warmed through.
Make Ahead: I recommend you make these fresh. However, you could bake the wings with the Italian seasoning a day in advance. Then glaze and bake for a second time before serving.

- Mediterranean Style: Skip the Hot Sauce altogether and for the second bake, glaze with a mix of butter, garlic powder, and parmesan cheese.

Great idea! I have not tried this myself but you can try and cook wings at 400°F for 25–30 minutes, shaking halfway through. Then, brush with sauce and air-fry for an additional 5 minutes.
