Super easy and super delicious – or should I say soup-er easy and soup-er delicious!  This one takes me straight back to childhood, and I will be eating this as long as Campbell’s produces Chicken Gumbo Soup in a can. 

Not sure where my mom got this recipe originally, but it’s probably from the good old days when magazines were full of recipes that featured a can of soup. In our house, we called these hamburgers Chicken Gumbo Hamburgers or just Chicken Gumbo.  As in “Mom, can you make Chicken Gumbo for supper?”  Mom always knew we weren’t asking for the Cajun stew, but Chicken Gumbo Hamburgers.  ‘

My sister, Diana, always insisted that Mom make fried potatoes and cottage cheese when she served Chicken Gumbo.  

I’ve seen similar recipes in old group cookbooks, all with various names.  I’ve re-named them again for my version.  As with most sloppy joes, you’ll want to serve it with chips to scoop up the bits that fall out of your sandwich! 

There really is no substitute for the Campbell’s variety in this recipe. If you can’t find the soup at your grocery store, I have luck getting it on Amazon.  Once you taste this, you’ll want to stock up!
